The fresh truffle sale

The price of fresh truffle changes every day and depends on the size, the weight and availability of fresh truffle, so is not possible to set a universal price. This will be set according to your necessities and to the availability of the product.

Every night we buy fresh truffle from truffle hunters. Each truffle is checked, brushed and then classified depending on the size and quality. The precious tubers are packed in small glass jars for transport.

For longer journeys, we pack the truffles with ice in small polystyrene boxes, in order to guarantee the freshness and the quality of the product when it will reach your table.

The main types of truffles with their relevant harvesting period

White Truffles:
Premium white truffles (tuber magnatum pico), harvested between 1 October and 31 December;
Whitish or Bianchetti Truffles (tuber borchii Vitt.),harvested between 15 January and 30 April;
Black Truffles:
Black Winter Truffles (tuber melanosporum), harvested between 15 November and 15 March;
Black Summer Truffles (tuber aestivum vitt.), harvested between 1 May and 30 November;
Burgundy Truffles (tuber uncinatum), harvested between mid-September and 31 December.

Storing Fresh Truffles

Both Black and White Truffles can be stored in a fridge, in the less chilly part, individually wrapped in absorbent kitchen paper and placed inside an airtight food container; change the paper if necessary, even every day. Refrigerator storage time is: between approx. 5 and 15 days for Black Truffles, approx. 4/5 days for White Truffles. Never freeze White Truffles, while Black Truffles may be frozen individually in a glass container, in extravirgin olive oil or butter. In this case, storage time ranges between 5 and 6 months, depending on the method used.
